Good Mood Board
I’ve still got a bad back, but really wanted to cook. So this was a great exercise in doing as little as possible with great ingredients to get the maximum yum. My kind of cooking as you know.
All the veg were just cooked in oil and salt, the chard had a little lemon… So it was sliced potatoes roasted at 200C until crispy, PSB scorched on the griddle pan until just tender, and sautéed rainbow chard (stems first!) finished with a squeeze of lemon.
Manouri was done the same really, just some oil and nice hot griddle pan. I love this cheese SO MUCH…
What brought this all together was the herbs and quick garlic and chilli oil!
For the oil, in a heatproof bowl I put some chilli flakes, grated fresh garlic, porcini mushroom powder, cumin seeds, sesame seeds, sugar and a little salt. I then heated the leftover shallot oil from last week (you could use plain of course), until hot but not quite smoking, and poured over the spices in the bowl and gave it a good mix to combine.
This was served all piled on a board, with tonnes of freshly picked mint and coriander leaves and all that oil drizzled over the top.
We annihilated it, it was banging. Will make again!
