These are SO MOREISH! And easy to make, and use up all the discard you can muster. Sold yet?!
Ingredients (Baker’s percentages):
100% Starter discard (around 100g starter will make a tray of crackers)
5-10% (oil) or 5-15% (melted and cooled butter)
Fine salt for the batter
Sprinkles for on top: sea salt flakes, then whatever seeds, spices, dried herbs etc you fancy! Go wild! You can make them plain, lightly sprinkled or heavily seeded and they’re all delish.
METHOD
Preheat oven to 150C
Mix the discard, oil/butter and a pinch of fine sea salt, mix until properly combined.
Spread evenly and quite thinly onto paper lined baking trays then sprinkle with some sea salt and your choice of flavourings / toppings.
Bake for 40-60 minutes, checking every 15-20 to make sure they aren’t browning too much. You can turn the oven down to 125/100C if needed. Just make sure they are fully dried out before removing from the oven.
Leave to cool on a wire rack then break into shards and store in an airtight container (on their own so they stay crisp).
You will find they get consumed before they have a chance to go stale, but I’ve had some stick around for a week that were still fresh as day one, so I'm sure they would be fine for 10-14 days if stored well!
