Chila: Gram Flour Pancakes

Makes 4-6

0.25-0.5 tsp turmeric

0.5 tsp BP

1 tsp salt

100g gram flour

300ml water

1 clove garlic

Thumb sized piece of ginger

1-2 spring onions or one small shallot

A handful of coriander

1 green chilli

Juice of 1/2-1 lemon

Cold-pressed rapeseed oil

  1. Sieve the flour, salt, turmeric and baking powder into a bowl. Mix with the water a little at a time to form a nice smooth paste at first, then a thin batter once all the water has been added.

  2. Chop the herbs and spices and mix into the batter - finely chop or grate the herbs, onion, ginger etc.

  3. Heat a little oil in your pancake pan and fry as you would regular crepes (as shown in the video), making sure to monitor the heat to ensure even cooking and a deep golden colour without burning. They should take about 2-3 minutes on the first side, and 1-2 on the second.

  4. Repeat for all of the batter and enjoy! You will probably want to use a little oil in the pan for each pancake to minimise the risk of sticking! These are great as a snack, bread alternative, or part of a meal.
